Cocoa Fiber CO is a preparation obtained from roasted cocoa husks after cleaning, macerating (mechanical grinding to micron size) and sterilization (heat-steam). This production process is purely physical and the final product does not contain any chemicals and/or additives. Therefore it is 100% natural and retains the brown colour and flavour characteristic of cocoa. Cocoa Fiber CO can be used in bakery goods and other chocolate products to replace up to 100% of the cocoa powder at 1:1 ratio (depending on the cocoa powder colour).
The preparation can be used as an additive to bakery and other industries. It may replaces up to 100% cocoa powder in baked goods and chocolate products.
