Fat Reduction in Bread

Unicell 200 is a range of high cellulose dietary fiber of natural origin (fiber content in dry mass: 90-99%). It appears as white to off-white powder with natural taste and smell. Apart from major improvements in nutritional profile, it has also a positive impact on texture, yield and freshness of the final product.

Our R&D Department has conducted a research to examine how the addition of Unicell 200 in different dosages affects the final application, the burger buns, in terms of fat reduction. The buns were tested in a series of blind tests and the following results were obtained

Although the 50% added fat reduction sample was assessed better in the blind tests, the differences in assessment between them were not significant and the taste was fully acceptable.
