Thanks to the fiber addition, the yield is significantly increased without organoleptic parameters detoriation, and thanks to its water binding properties, bacon is more tender. The weight loses are lower during the heat treatment, the weepage is reduced, the shape is more stable. As a result, bacon with added fiber exhibits improved sliceability.
